Friends, if you’re like me, you’re glad the election is finally over. Whether you’re a Republican or Democrat, Conservative or Liberal, Elephant or Donkey, the race has been run and a winner has been named.

So, now what?

Well, it’s time to get down to business. It’s time to recognize that we’re all a little (or a lot) different and it’s those differences that make this country great. It’s time to accept (and hopefully embrace) our diversity and strive to make the best of it.  Of course, that’s easier said than done, so I’m hoping we can learn a lesson or two from today’s inspiration: the chocolate, pretzel, and sea salt cookie!

This cookie has it ALL. I’m talking sweet & salty, crunchy & chewy, fluffy & dense. This is a bipartisan cookie that gracefully exemplifies the beauty of diversity! Don’t believe me? Make some for yourself!

The original inspiration for this cookie can be found here, and my version is below.

What You’ll Need::

  • 1 1/2 cups of all purpose flour
  • 1/2 tsp. of table salt
  • 1/4 tsp. of baking soda
  • 1/2 cup of butter, softened

  • 1/3 cup of granulated sugar
  • 1 egg (beaten)
  • 1/2 tsp vanilla extract
  • 1 1/4 cup milk chocolate chips
  • 1/2 cup broken up pretzel pieces
  • Coarse Sea Salt

What To Do::

  1. Combine flour, table salt, and baking soda. Set aside.
  2. Cream together butter and sugars.
  3. Slowly mix in egg and vanilla.
  4. Stir in chocolate chips and pretzels.
  5. Cover dough and put in the fridge for 30 minutes.
  6. Preheat oven to 350 degrees and line baking sheets with parchment paper.
  7. Scoop heaping tablespoons of dough onto baking sheet, pressing down slightly.
  8. Sprinkle lightly with coarse salt.
  9. Bake 10-12 min depending on desired crispness.
  10. Allow cookies to cool before eating.
  11. Enjoy!
